  • 5 cups day-old bread, cubed
  • 2 cups peeled and diced apples Choose firm varieties like Granny Smith or Honeycrisp.
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 4 large eggs
  • 2 cups milk Can substitute with almond milk or another non-dairy option.
  • 1 teaspoon vanilla extract
  • 1/4 cup butter, melted Alternatively, use coconut oil.
  • 1/4 cup raisins (optional) Can substitute with cranberries.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, combine the cubed bread, diced apples, sugar, cinnamon, nutmeg, and optional raisins. Stir gently.
  3. In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter.
  4. Pour the egg mixture over the bread mixture and stir gently until coated.
  5. Transfer to the prepared baking dish and spread evenly.
  6. Bake for 45-50 minutes until the top is golden brown and a knife inserted comes out clean.
Vanilla Sauce
  1. In a small saucepan over low heat, combine powdered sugar, milk, and vanilla extract. Stir until smooth and warm.
Serving
  1. Once the bread pudding is done, let it cool slightly. Serve warm drizzled with vanilla sauce.

Notes

For best texture, let the bread pudding cool slightly before serving. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
