- In a slow cooker, combine the chicken, onions, garlic, paprika, salt, black pepper, cayenne (if using), diced tomatoes, and chicken broth. Stir well to ensure all ingredients are evenly distributed.
Cooking
- Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- Once the cooking time is up, carefully remove the chicken and set it aside on a cutting board.
- In a small mixing bowl, whisk together the sour cream and flour until smooth. Stir this mixture back into the slow cooker to thicken the sauce.
- Shred the chicken using two forks, discarding any bones if you used bone-in cuts, and return the shredded chicken to the slow cooker. Stir well to coat it in the creamy sauce.
- Allow everything to cook together for an additional 15-20 minutes to meld the flavors.
Serving
- Spoon the chicken over cooked egg noodles or dumplings. Garnish with freshly chopped parsley.
