Ingredients

  • 2 lbs beef, cut into chunks Use well-marbled cuts like chuck or brisket.
  • 2 tbsp olive oil Can substitute with canola or avocado oil.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • Salt and pepper to taste Add gradually to avoid overwhelming the dish.
  • 2 cups beef broth Can substitute with vegetable broth or chicken stock.
  • 1 can (14 oz) diced tomatoes
  • 1 cup dried apricots, chopped Can substitute with prunes or golden raisins.
  • 1/2 cup almonds, toasted Can substitute with pecans or walnuts.
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Begin by heating 2 tablespoons of olive oil in a large tagine or heavy pot over medium heat. Once hot, add the chopped onion and minced garlic. Sauté them for about 5 minutes, or until softened and aromatic.
  2. Next, introduce the beef chunks to the pot. Arrange them in a single layer and sear on all sides for about 5 to 7 minutes, allowing the meat to develop a nice brown crust.
  3. Then, sprinkle the ground cumin, coriander, cinnamon, and ginger over the meat. Season with salt and pepper to taste and stir well, ensuring the beef is coated in the fragrant spices.
Cooking
  1. After the spices are combined, pour in the beef broth and add the can of diced tomatoes. Stir gently to combine, and bring the mixture to a simmer over medium heat.
  2. Once simmering, add the chopped dried apricots to the pot. Cover the tagine or pot with a lid, reducing the heat to low. Allow it to simmer for 1.5 to 2 hours, or until the beef is tender and easily pulls apart with a fork.
Serving
  1. Before serving, sprinkle the hot tagine with toasted almonds and fresh cilantro for added texture and flavor. Serve warm alongside couscous or pita.

Notes

Store in the refrigerator for 3 to 4 days in an airtight container. Can be frozen for up to 3 months. Reheat on stovetop over low heat or in short microwave intervals.
