Ingredients
  

Base Ingredients
  • 2 cups shredded coconut Use unsweetened or sweetened shredded coconut.
  • 1 can sweetened condensed milk
  • 1/2 teaspoon almond extract Can be substituted with vanilla extract.
Toppings
  • 1 cup whole almonds Can substitute with chopped walnuts or pecans.
  • 2 cups milk chocolate chips, melted Can substitute with dark chocolate chips or vegan chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine the shredded coconut, sweetened condensed milk, and almond extract.
  3. Stir the mixture well until the coconut is evenly coated and binds together.
Baking
  1. Firmly press the coconut mixture into the prepared pan, ensuring it's compact.
  2. Bake in the oven for 12 to 15 minutes until the edges turn lightly golden.
  3. Allow the pan to cool completely on a wire rack.
Assembling
  1. Once cooled, arrange whole almonds evenly across the top of the coconut layer.
  2. Pour the melted milk chocolate over the almonds and spread it evenly.
Chilling and Serving
  1. Chill in the refrigerator for at least 30 minutes until the chocolate has set.
  2. Lift the bars out of the pan using the parchment paper and cut into squares or rectangles.
  3. Store in an airtight container at room temperature for up to two weeks.

Notes

These bars can be frozen for up to three months. For easier portioning, warm the bars slightly in the microwave for 10 to 15 seconds before serving.
