Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Fresh organic chicken breasts recommended.
  • 1 tbsp black pepper To taste, essential for seasoning.
Bruschetta Topping
  • 2 cups cherry tomatoes (diced) Can substitute with other fresh tomatoes.
  • 1/4 cup fresh basil Chopped fresh basil for flavor.
  • 2 cloves garlic (minced) For added freshness.
  • 1 tbsp balsamic vinegar Can substitute with balsamic glaze.
  • 1 tbsp olive oil Use avocado oil as an alternative if desired.
For Serving
  • 1 cup part-skim mozzarella (shredded) Feel free to use other types of cheese.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with black pepper and place them in a baking dish.
Prepare Bruschetta Topping
  1. In a separate bowl, mix the diced cherry tomatoes, basil, garlic, balsamic vinegar, and olive oil.
Bake Chicken
  1. Bake the seasoned chicken in the oven for about 20 minutes.
Add Toppings and Bake More
  1. Remove the chicken from the oven and spoon the bruschetta topping over each breast.
  2. Sprinkle the mozzarella cheese on top of the bruschetta mixture.
Finish Baking
  1. Return the dish to the oven and bake for an additional 8-10 minutes, until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F.
Serve and Enjoy
  1. Let the dish cool for a minute before serving warm.

Notes

Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months. Reheat gently on the stovetop or in the microwave.
