Preparation
- Preheat your oven to 425°F. Optionally, line a baking sheet with foil.
- Pat the chicken thighs very dry with paper towels. Season both sides with kosher salt and black pepper.
Searing the Chicken
- Heat 2 tablespoons of olive oil in a large, oven-safe skillet over medium-high heat.
- Once the oil shimmers, place the chicken thighs skin-side down and sear for about 5 minutes until golden brown and crispy.
- Flip the thighs briefly to sear the other side.
Preparing the Glaze
- In a small bowl, whisk together 1/2 cup balsamic vinegar, 3 tablespoons honey, 2 minced garlic cloves, and 1 teaspoon dried Italian herbs.
- Pour the glaze evenly over the seared chicken in the skillet.
Roasting
- Transfer the skillet to the preheated oven and roast for 25 to 28 minutes.
- Baste the chicken with the pan sauce halfway through cooking.
- Ensure the chicken reaches an internal temperature of 165°F.
Finishing Touches
- Remove the skillet from the oven and let the chicken rest for 5 minutes.
- Garnish with fresh rosemary sprigs before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. Chicken can be frozen for up to 3 months. Reheat at 350°F for 10 minutes or in the microwave in 1-minute intervals.
