  • 8 pieces bone-in, skin-on chicken thighs Best for juicy meat and crispy skin.
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil For searing.
  • 1/2 cup balsamic vinegar For glaze.
  • 3 tbsp honey For sweetness.
  • 2 cloves garlic, minced
  • 1 tsp dried Italian herbs For flavor.
  • fresh sprigs rosemary For garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F. Optionally, line a baking sheet with foil.
  2. Pat the chicken thighs very dry with paper towels. Season both sides with kosher salt and black pepper.
Searing the Chicken
  1. Heat 2 tablespoons of olive oil in a large, oven-safe skillet over medium-high heat.
  2. Once the oil shimmers, place the chicken thighs skin-side down and sear for about 5 minutes until golden brown and crispy.
  3. Flip the thighs briefly to sear the other side.
Preparing the Glaze
  1. In a small bowl, whisk together 1/2 cup balsamic vinegar, 3 tablespoons honey, 2 minced garlic cloves, and 1 teaspoon dried Italian herbs.
  2. Pour the glaze evenly over the seared chicken in the skillet.
Roasting
  1. Transfer the skillet to the preheated oven and roast for 25 to 28 minutes.
  2. Baste the chicken with the pan sauce halfway through cooking.
  3. Ensure the chicken reaches an internal temperature of 165°F.
Finishing Touches
  1. Remove the skillet from the oven and let the chicken rest for 5 minutes.
  2. Garnish with fresh rosemary sprigs before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Chicken can be frozen for up to 3 months. Reheat at 350°F for 10 minutes or in the microwave in 1-minute intervals.
