Preparation
  1. Preheat your oven to 400°F (200°C). Arrange the cod fillets in a baking dish without overlapping.
  2. Scatter the cherry tomatoes, Kalamata olives, and minced garlic around the fish.
  3. Drizzle the dish with olive oil and season generously with black pepper and fresh oregano.
Baking
  1. Place the baking dish in the preheated oven and bake for about 15-18 minutes, or until the cod flakes easily with a fork and the tomatoes burst.
Serving
  1. Remove the dish from the oven and serve the cod with lemon wedges on the side.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently to avoid overcooking the fish. You can freeze cooked cod for up to 2 months, but fresh is best.
