  • 1 lb chicken breasts, cut into bite-sized pieces Use boneless, skinless chicken for best results.
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour Can use gluten-free flour for a gluten-free option.
  • 2 eggs, beaten
  • 1/2 cup orange juice Freshly squeezed is best.
  • 2 tablespoons soy sauce Use low-sodium for a healthier option.
  • 1 tablespoon orange zest
  • 1 tablespoon honey Can substitute with maple syrup.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste Season to preference.
  • Cooking spray For achieving a crispy finish.

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the all-purpose flour with salt and pepper.
  3. Dredge each piece of chicken in the seasoned flour, then dip in beaten eggs, and finally coat with panko breadcrumbs.
  4. Place coated chicken pieces on the baking sheet and spray lightly with cooking spray.
Cooking
  1. Bake chicken for 20-25 minutes, or until golden brown and crispy, turning halfway through.
  2. While baking, combine orange juice, soy sauce, orange zest, honey, and garlic powder in a small saucepan and simmer for about 5 minutes until thickened.
Serving
  1. Drizzle the thickened orange sauce over the baked chicken and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can freeze for up to 2 months.
