Preparation
- Bring a large pot of salted water to a boil, then cook the elbow macaroni until al dente according to package directions. Drain well.
- In the same pot, melt the butter over medium heat. Whisk in the flour and cook for 1 to 2 minutes until smooth. Gradually whisk in the warm milk until smooth and let it simmer for 4 to 5 minutes until thickened.
- Remove from heat and stir in the cheddar, Monterey Jack, garlic powder, and smoked paprika. Season with salt and pepper, then fold in the cooked macaroni.
- Spread the mac and cheese into a parchment-lined 9x9-inch pan and press down firmly. Cover and refrigerate for at least 1 hour until firm.
Breading and Baking
- Cut the chilled mac and cheese into 24 small squares or rectangles.
- Set up a breading station with flour, beaten eggs, and panko mixed with Parmesan. Dredge each piece in flour, dip in egg, and coat with breadcrumbs.
- Place on a parchment-lined baking sheet, spray with olive oil, and bake at 425°F until golden and crisp, flipping halfway through.
Serving
- Let cool for 3 to 4 minutes before serving. Serve warm as a snack or appetizer.
Notes
These bites are great for potlucks, parties, and can be reheated easily. Ensure to chill the mac and cheese properly for the best shape.
