Preparation
- Preheat your oven to 375°F and line a 12-cup muffin tin with paper liners.
- In a mixing bowl, whisk together 2 cups of flour and 1.5 teaspoons of baking powder.
- In another large bowl, mix together 3/4 cup brown sugar, 2 eggs, 1/3 cup vegetable oil, and 1 tablespoon of grated ginger until smooth.
- Gently fold in the dry ingredients until just combined, then carefully fold in the diced pears.
Make Crumb Topping
- In a small bowl, combine 1/3 cup flour and 3 tablespoons brown sugar.
- Cut in 3 tablespoons of cold butter until the mixture resembles coarse crumbs.
Bake the Muffins
- Spoon the muffin batter evenly into the lined tin, filling each cup about three-quarters full.
- Sprinkle the crumb topping generously over each muffin.
- Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
Notes
Store muffins at room temperature in an airtight container for up to three days. For longer storage, freeze for up to two months. Reheat in microwave for 20-30 seconds or in a 300°F oven for 5-7 minutes.
