  • 1.5 cups warm water Water temperature should be around 110°F for activating yeast.
  • 2 tablespoons honey Provides sweetness to the dough.
  • 3 tablespoons olive oil Plus more for brushing before baking.
  • 2 tablespoons fresh rosemary, finely chopped Adds a delightful herbal aroma.
  • 1.5 teaspoons kosher salt Balances the flavors in the dough.
  • Flaky sea salt for topping Gives a savory crunch topping.

Method
 

Activate the Yeast
  1. In a large bowl, whisk together 1.5 cups of warm water, 1 packet of active dry yeast, and 2 tablespoons of honey. Let this mixture sit for about 5 minutes until foamy.
Make the Dough
  1. Add 3 tablespoons of olive oil, 2 tablespoons of finely chopped rosemary, 1.5 teaspoons of kosher salt, and 4 cups of bread flour to the foamy yeast mixture. Mix until it begins to come together and knead for about 8 minutes until smooth and elastic.
Let Dough Rise
  1. Grease a large bowl with olive oil, place the dough inside, cover loosely, and let it rise in a warm place for about 1 hour until doubled in size.
Shape Rolls
  1. Punch down the risen dough gently to release air, divide it into 15 equal pieces, and shape each piece into a smooth ball before placing in a greased baking dish.
Second Rise
  1. Cover the baking dish and let the rolls rise for 30 minutes until they are puffy.
Bake Rolls
  1. Preheat your oven to 375°F. Brush the rolls with olive oil, sprinkle with flaky sea salt, and bake for 18-20 minutes until golden brown.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Reheat in a 350°F oven for 10 minutes or microwave for 20-30 seconds and broil to crisp.
