Method
Activate the Yeast
- In a large bowl, whisk together 1.5 cups of warm water, 1 packet of active dry yeast, and 2 tablespoons of honey. Let this mixture sit for about 5 minutes until foamy.
Make the Dough
- Add 3 tablespoons of olive oil, 2 tablespoons of finely chopped rosemary, 1.5 teaspoons of kosher salt, and 4 cups of bread flour to the foamy yeast mixture. Mix until it begins to come together and knead for about 8 minutes until smooth and elastic.
Let Dough Rise
- Grease a large bowl with olive oil, place the dough inside, cover loosely, and let it rise in a warm place for about 1 hour until doubled in size.
Shape Rolls
- Punch down the risen dough gently to release air, divide it into 15 equal pieces, and shape each piece into a smooth ball before placing in a greased baking dish.
Second Rise
- Cover the baking dish and let the rolls rise for 30 minutes until they are puffy.
Bake Rolls
- Preheat your oven to 375°F. Brush the rolls with olive oil, sprinkle with flaky sea salt, and bake for 18-20 minutes until golden brown.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Reheat in a 350°F oven for 10 minutes or microwave for 20-30 seconds and broil to crisp.
