Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the trimmed asparagus with 1 tablespoon of olive oil and a sprinkle of black pepper. Spread it out evenly on a sheet pan.
Adding Salmon
- Place the salmon fillets on the sheet pan alongside the asparagus.
- Drizzle the remaining tablespoon of olive oil over the salmon fillets.
Seasoning
- Sprinkle the minced garlic evenly over the salmon, followed by the fresh dill, and finally layer the lemon slices on each fillet.
Cooking
- Roast in the preheated oven for 15-18 minutes until salmon flakes easily with a fork and asparagus is tender.
Serving
- Remove from oven and serve immediately for the best flavor and texture.
Notes
Leftovers can be stored in an airtight container in the fridge for 2-3 days or frozen for up to 2 months. Reheat on low on the stovetop or in a microwave, covering to retain moisture.
