  • 4 fillets salmon fillets Look for bright color and fresh smell
  • 1 lb asparagus (trimmed) Fresh and crisp
  • 2 tbsp olive oil May substitute with avocado oil
  • 2 tbsp fresh dill Can substitute with parsley or thyme
  • 1 whole lemon (sliced) Provides zest and brightness
  • 2 cloves garlic (minced) Fresh is ideal, but garlic powder can work
  • to taste black pepper Enhances flavors

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the trimmed asparagus with 1 tablespoon of olive oil and a sprinkle of black pepper. Spread it out evenly on a sheet pan.
Adding Salmon
  1. Place the salmon fillets on the sheet pan alongside the asparagus.
  2. Drizzle the remaining tablespoon of olive oil over the salmon fillets.
Seasoning
  1. Sprinkle the minced garlic evenly over the salmon, followed by the fresh dill, and finally layer the lemon slices on each fillet.
Cooking
  1. Roast in the preheated oven for 15-18 minutes until salmon flakes easily with a fork and asparagus is tender.
Serving
  1. Remove from oven and serve immediately for the best flavor and texture.

Notes

Leftovers can be stored in an airtight container in the fridge for 2-3 days or frozen for up to 2 months. Reheat on low on the stovetop or in a microwave, covering to retain moisture.
