  • 2.5 lbs beef chuck, cubed Choose beef chuck with good marbling for tenderness
  • 4 pieces potatoes, cubed You can use sweet potatoes for a sweeter taste
  • 3 pieces carrots, sliced Can substitute with parsnips or turnips
  • 1 piece onion, diced
  • 1 can diced tomatoes Fresh chopped tomatoes can be used instead
  • 4 cups beef broth Vegetable broth can be used for a lighter version
  • 2 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • to taste Salt and pepper Add to taste just before serving
  • 1 slice Cornbread, for serving Pairs well with the stew

Method
 

Preparation
  1. Gather and prep all your ingredients. Cube the beef chuck into bite-sized pieces, chop the potatoes and carrots, and dice the onion. Open your can of diced tomatoes.
  2. Place everything into your 6-quart slow cooker: beef cubes, potatoes, carrots, onion, diced tomatoes, beef broth, Worcestershire sauce, and smoked paprika.
Cooking
  1. Cover the slow cooker with its lid. Set it to cook on low heat for 8 hours.
  2. Avoid lifting the lid too often to maintain heat.
Finishing Touches
  1. After 8 hours, check that the beef is tender and vegetables are cooked through but still holding their shape.
  2. Season the stew with salt and pepper to taste before serving.
Serving
  1. Ladle the stew into bowls and serve hot with a slice of warm cornbread.

Notes
