  • 1 head red cabbage, thinly sliced Choose a firm and heavy cabbage for the best texture.
  • 2 medium apples, cored and sliced Granny Smith for tartness or sweeter apples for a softer flavor.
  • 1 medium onion, thinly sliced Use white or yellow onion as substitutes.
  • 1 cup German lager beer Can substitute with low-sodium chicken broth for an alcohol-free version.
  • 1/4 cup apple cider vinegar Adds acidity to balance flavors.
  • 3 tbsp packed brown sugar Alternatively, use maple syrup or honey.
  • 3 tbsp unsalted butter For cooking the onions.
  • 1 tsp caraway seeds Can be substituted with fennel seeds for a different flavor.
  • to taste tsp kosher salt Add gradually to avoid over-salting.

Method
 

Preparation
  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the sliced onion and cook for about 5 minutes, until soft and translucent.
  3. Add the sliced red cabbage and apples, stirring to coat well with the onion.
  4. Pour in the German lager beer and apple cider vinegar, stirring in the brown sugar, caraway seeds, and a pinch of kosher salt.
  5. Cover the pot and let simmer over low heat for 40 to 45 minutes, stirring occasionally.
  6. Once the cabbage is very tender, taste and adjust the seasoning as needed with salt or a splash of vinegar.
  7. Serve warm alongside bratwurst, roasted pork, or any Oktoberfest-style meal.

Notes

Store leftovers in an airtight container for up to 5 days; flavors improve after a day in the fridge. Can freeze for up to 2 months. Reheat gently with a splash of water or broth as needed.
