Ingredients
  

For the Beef and Sauce
  • 3 lbs beef chuck roast, trimmed and cut into 2-inch chunks Best choice for tenderness
  • 4 pieces dried guajillo chiles, stemmed and seeded
  • 2 pieces dried ancho chiles, stemmed and seeded
  • 1 piece white onion, quartered Plus 1/4 cup diced for serving
  • 6 cloves garlic, peeled
  • 2 tbsp apple cider vinegar
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 2 pieces bay leaves
  • 4 cups low-sodium beef broth
  • kosher salt to taste kosher salt
For the Tacos
  • 20 (6-inch) corn tortillas
  • 2 cups shredded Oaxaca cheese (or low-moisture mozzarella)
  • 1/2 cup fresh cilantro, chopped For serving
  • lime wedges for serving lime wedges

Method
 

Preparation
  1. Preheat a dry skillet over medium heat and toast the guajillo and ancho chiles for about 1 minute per side. Move them to a heatproof bowl.
  2. Cover the toasted chiles with hot water and let them soak for 15 minutes, then drain well.
  3. Blend the softened chiles with quartered onion, garlic, apple cider vinegar, cumin, and oregano until smooth. Add a splash of soaking water if needed.
Cooking
  1. Season beef chunks with kosher salt. In a large pot or Dutch oven, heat over medium-high and sear beef in batches for 6 to 8 minutes until deeply browned.
  2. Add the browned beef back to the pot with the blended chile sauce, beef broth, and bay leaves. Bring to a boil, then lower heat and simmer covered for 2.5 to 3 hours until beef is tender.
  3. Remove beef, shred it, and skim the fat from the top of the broth for the consomé.
  4. Lightly dip each corn tortilla in the reserved fat, then fill with shredded beef and cheese, and cook on a skillet until crisp and golden on both sides.
  5. Serve hot with consomé for dipping, diced onion, chopped cilantro, and lime wedges.

Notes

Store shredded beef and broth in separate airtight containers for up to 4 days or freeze separately for up to 3 months. Reheat gently on the stovetop or microwave.
