Wet Ingredients
  • 2 large eggs Room temperature eggs are best for mixing.
  • 1 3/4 cups milk Regular or dairy-free milk work.
  • 1/4 cup unsalted butter, melted Plus more for greasing the pan.
  • 1 tbsp unsweetened cocoa powder mixed with water For the black batter color.
  • Orange gel food coloring to taste Add until desired brightness is achieved.
  • Black gel food coloring to taste Add to achieve a rich black color.

Method
 

Preparation
  1. In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt.
  2. In a separate bowl, whisk the eggs, milk, and melted unsalted butter until smooth.
Batter Mixing
  1. Pour the wet mixture into the dry ingredients and gently stir until just combined; be careful not to overmix.
  2. Split the batter evenly into two bowls, tint one orange with gel food coloring and the other black with cocoa powder and food coloring.
Cooking
  1. Heat a griddle or nonstick skillet over medium-low heat and lightly butter the surface.
  2. Pour a small circle of black batter, then swirl a slightly larger ring of orange batter around it to create a two-tone pancake.
  3. Cook for 2 to 3 minutes until bubbles form on the surface and edges look set.
  4. Flip carefully and cook for another 1 to 2 minutes until golden.
Serving
  1. Serve warm with butter and maple syrup.
  2. Refrigerate leftovers for up to 2 days. Reheat gently before serving.
