  • 4 pieces black (squid ink or pumpernickel) bagels, halved
  • 8 large eggs Use farm-fresh for better flavor
  • 8 slices cheddar cheese
  • 8 slices cooked bacon
  • 1 tablespoon unsalted butter
  • to taste Salt and black pepper Season just before cooking
  • 4 pieces thin triangular cheese or bacon pieces, for cat ears Add creativity to presentation
  • 8 pieces small black olive, for eyes Press onto cheese for decoration

Preparation
  1. Toast the bagel halves until golden and crisp.
Cooking
  1. Melt the butter in a nonstick skillet over medium heat.
  2. Crack in the eggs, cooking in batches if necessary. Season with salt and black pepper.
  3. Let the eggs cook for 3 to 4 minutes, or until the whites are set and the yolks reach your preferred doneness.
Assembly
  1. Place one fried egg and a slice of cheddar cheese on the bottom half of each toasted bagel.
  2. Layer two slices of cooked bacon on top.
  3. Tuck two small triangular pieces of bacon or cheese into the top half of each bagel for cat ears.
  4. Press two small pieces of black olive onto the melted cheese on the bottom half to create cat eyes.
Serving
  1. Close the sandwich by placing the top half over the assembled filling.
  2. Serve the sandwiches immediately while warm and the cheese is melted.

Notes

For variations, swap black bagels for regular ones. Replace bacon with turkey or vegetarian options. Use different cheeses or egg styles for a twist.
