Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, mix the wet ingredients: vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar until smooth.
- Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.
- Divide the batter among the cupcake liners, filling each about two-thirds full.
- Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely.
- Once cooled, frost each cupcake generously with cream cheese frosting and drip with red gel food coloring for decoration.
