  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, mix the wet ingredients: vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.
  5. Divide the batter among the cupcake liners, filling each about two-thirds full.
  6. Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely.
  7. Once cooled, frost each cupcake generously with cream cheese frosting and drip with red gel food coloring for decoration.
