Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing thoroughly after each addition.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, starting and ending with dry ingredients. Mix until just combined.
- Fold in the lemon zest, lemon juice, and fresh blueberries gently to avoid breaking the blueberries.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Store in an airtight container in the fridge for up to a week. It can be frozen for about 3 months, wrapped tightly. Reheat slices in the microwave for 15-20 seconds or warm on the stovetop.
