Ingredients
  

Main Ingredients
  • 8 small small flour tortillas
  • 1 lb ground beef Choose 80% lean for best flavor.
  • 1 packet taco seasoning
  • 1 cup shredded cheese Use your favorite type.
  • 1/2 cup sour cream Can substitute Greek yogurt for a lighter option.
  • black olive slices For ghost eyes.
  • toothpicks For securing rolled up tortillas.

Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat. Break it apart with a spatula and cook until it's no longer pink. Drain any excess fat.
  2. Add the taco seasoning and water according to the packet instructions, stirring until mixed. Allow to simmer for about 5 minutes.
  3. Warm the small flour tortillas in the microwave or on the stove for a few seconds until pliable.
  4. Cut the warmed tortillas into rounded ghost shapes using kitchen scissors.
Assembly
  1. Place a spoonful of seasoned taco meat in the center of each ghost-shaped tortilla.
  2. Add some shredded cheese on top of the meat.
  3. Carefully fold the tortillas over the filling and roll them up. Use a toothpick to secure if needed.
Cooking
  1. Place the assembled Boo Rito Bites back in the skillet over medium heat or in a preheated oven at 350°F. Warm for about 5-7 minutes until the cheese is melted.
  2. Ensure not to overcook. Add a dollop of sour cream and press a black olive slice in place for eyes just before serving.

Notes

These bites can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. To reheat, warm in a skillet or microwave.
