  • 2 cups grated zucchini Use firm, brightly colored zucchini. Squeeze out excess moisture.
  • 1 cup brown butter, cooled Brown the butter and let it cool before using.
  • 1 cup granulated sugar Can be substituted with coconut sugar or honey.
  • 1/2 cup brown sugar
  • 2 large eggs For a vegan option, substitute with flax eggs.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be substituted with whole wheat flour.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Dark or white chocolate chips can be used as alternatives.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or cooking spray.
  2. In a large bowl, combine the cooled brown butter with both granulated sugar and brown sugar. Mix well until smooth.
  3. Add the eggs and vanilla extract into the sugar mixture. Stir until you have a smooth batter.
  4. Fold in the grated zucchini, ensuring it's evenly distributed.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined to avoid overmixing.
  7. Fold in the chocolate chips.
  8. Pour the batter into your prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake in the preheated oven for 50-60 minutes. Check for doneness with a toothpick; it should come out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store wrapped at room temperature for up to 3 days, or freeze for up to 3 months. Reheat slices as desired.
