  • 1.5 lbs smoked sausage, sliced into rounds Choose a firm and well-seasoned sausage for best results.
  • 1.5 lbs baby potatoes, quartered Cut into even sizes for consistent cooking.
  • 1 lb green beans, trimmed Add toward the end of cooking to remain crisp.
  • 1 each red bell pepper, sliced Feel free to substitute with other colored bell peppers.
Seasoning and Oil
  • 3 tbsp olive oil Can be substituted with avocado oil or melted butter.
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried Italian seasoning
  • salt and black pepper to taste Season in layers to avoid over-salting.
Garnish
  • 2 tbsp fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F. Line a large sheet pan with parchment paper.
  2. In a large bowl, toss the quartered baby potatoes with 1 tablespoon olive oil, half the garlic powder, paprika, salt, and pepper. Spread them in a single layer on the sheet pan and roast for 15 minutes.
  3. In the same bowl, toss the sliced smoked sausage, green beans, and red bell pepper with the remaining 2 tablespoons olive oil, the rest of the garlic powder, and the dried Italian seasoning.
  4. Remove the pan from the oven and add the sausage and vegetable mixture to the partially roasted potatoes. Spread everything into a single even layer.
Cooking
  1. Return the pan to the oven and roast for 15 more minutes, or until the sausage is browned, the potatoes are fork-tender, and the green beans are crisp-tender.
  2. Taste and adjust seasoning with more salt and pepper if needed. Garnish with fresh parsley and serve directly from the pan.
