Ingredients

Main Ingredients
  • 1 cup light brown sugar 220 g
  • 1 cup honey 339 g, one 16-ounce jar
  • 1 tablespoon white vinegar 16 g
  • 1/4 teaspoon kosher salt 1.5 g
  • 1 tablespoon baking soda 12 g
  • 10 ounces chocolate, melted for coating optional
Equipment
  • 1 large heavy-bottomed pot The mixture foams to at least double in size.
  • 1 candy thermometer
  • 1 9x13-inch pan and parchment paper for lining the pan

Method

Preparation
  1. Line a 9×13-inch pan with parchment paper before you start cooking. This gives you a ready surface for the foam, and it also makes cleanup much easier.
Cooking the Sugar Mixture
  1. In a large, heavy-bottomed pot, combine the brown sugar, honey, vinegar, and salt over medium heat. Swirl the pot now and then, but do not stir.
  2. Keep cooking until the candy thermometer reaches 300°F.
Adding the Baking Soda
  1. Take the pot off the heat right away. Then quickly whisk in the baking soda. The mixture will foam up fast, often to at least twice its volume.
Pouring Into the Pan
  1. As soon as the baking soda is mixed in, gently pour the foam into the lined pan. Try not to pop the bubbles.
  2. Tilt or roll the pan just enough to level the candy without pressing it down.
Cooling, Breaking, and Coating
  1. Let the candy cool until crisp, which takes about 2 hours.
  2. Once it is fully set, break it into pieces. If you want the chocolate version, dip or coat the pieces in melted chocolate and let them harden before serving or storing.

Notes

Store in an airtight container at room temperature for up to 2 weeks, away from humidity and heat. For long-term storage, freeze in zip-top bags for up to 12 months.
