Method
Make the Spaetzle Batter
- In a large bowl, whisk together the flour, eggs, milk, salt, and nutmeg for 2 to 3 minutes until the batter is thick and elastic.
Boil the Water and Cook the Spaetzle
- Bring a large pot of generously salted water to a rolling boil. Press the batter through a spaetzle maker or colander into the water, cooking in batches for 2 to 3 minutes until the dumplings float, then lift them out with a slotted spoon.
Caramelize the Onions Slowly
- Melt 2 tablespoons of butter in a skillet over medium-low heat. Add sliced onions and cook slowly for 20 to 25 minutes, stirring occasionally until deeply golden brown and soft.
Toss Everything Together
- Add the remaining butter to the skillet with caramelized onions. Then add the drained spaetzle and toss on medium-high heat for 3 to 4 minutes until the spaetzle has light crisp edges.
Garnish and Serve
- Spoon the spaetzle onto plates or into a serving bowl, and finish with chopped chives for color and freshness. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in a buttered skillet over medium heat and add a splash of water if needed.
