Ingredients

Main Ingredients
  • 3 tablespoons butter, divided
  • 1/2 cup sliced almonds Use blanched almonds for a softer flavor if preferred.
  • 1/3 cup minced shallots Can replace with finely minced yellow or sweet onion.
  • 1 pound green beans Smaller French haricot vert preferred for better texture.
  • Salt and pepper to taste Add near the end to avoid over-seasoning.
  • 2 teaspoons lemon juice Can swap with white wine vinegar if necessary.
  • 2 tablespoons chopped parsley Fresh dill or chives can be used as alternatives.
  • 1 tablespoon water To help cook the green beans.

Method

Preparation
  1. Melt 1 tablespoon of the butter in a skillet over medium heat. Add the sliced almonds and toast them for 3 to 4 minutes, stirring often until golden brown. Remove from the skillet and wipe the pan clean.
  2. In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced shallots and cook for 3 to 4 minutes until soft and fragrant.
  3. Add the green beans and 1 tablespoon of water to the skillet. Cook, stirring occasionally, for 4 to 5 minutes until the beans are tender but still crisp.
  4. Stir in the lemon juice, salt, and pepper. Adjust seasoning as needed.
  5. Top with toasted almonds and chopped parsley. Serve immediately for best freshness.

Notes

For best results, use fresh, firm green beans and watch the almonds while toasting. Store leftovers in an airtight container for up to 3 days.
