Ingredients

Main Ingredients
  • 4 ounces orzo (about 2/3 cup)
  • 1 tablespoon butter (14 g)
  • 2 tablespoons cream or milk
  • 1/4 cup shredded Parmesan cheese (1 oz)
  • Salt and pepper to taste
  • Parsley for garnish (optional)

Method

Preparation
  1. Fill a medium pot with water and add a light sprinkle of salt. Bring the water to a boil over high heat.
  2. Add the orzo to the boiling water. Stir it, then cook according to the package directions. Stir occasionally to keep the small pasta pieces from sticking together. Near the end of the suggested cooking time, taste a piece to check that it is tender.
Cooking
  1. Carefully drain the cooked orzo in a colander. Let the water run off well, but do not leave the pasta sitting for long.
  2. Return the drained orzo to the pot, or place it in a warm serving bowl. Add the butter and stir until it melts and coats the pasta.
  3. Pour in the cream or milk and add the shredded Parmesan. Stir until the cheese begins to melt and the orzo looks lightly creamy.
Serving
  1. Season with salt and pepper to taste. Add parsley if you like, then serve the Buttery Parmesan Orzo Holiday Side Dish right away while it is warm and creamy.

Notes

For best results, serve immediately after preparation. If storing leftovers, warm them with a splash of cream and an extra sprinkle of Parmesan. This dish pairs well with roasted meats and seasonal vegetables.
