Biscuit Base Ingredients
  • 2 cups self-rising flour
  • 2 tablespoons firmly packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1 1/4 cups sweet potatoes, cooked, cooled, and mashed
  • 6 tablespoons butter, melted and cooled
  • 1/4 cup cold buttermilk

Method

Preparation
  1. Heat the oven to 350 degrees F and coat a cookie sheet with cooking spray.
  2. In a large bowl, whisk together the self-rising flour, brown sugar, baking powder, and ground cinnamon until evenly distributed.
  3. In another bowl, stir together the cooked, cooled, mashed sweet potatoes, melted butter, and cold buttermilk until combined.
  4. Make a well in the center of the dry ingredients and gently stir in the sweet potato mixture until the dough comes together.
  5. Turn the dough onto a lightly floured surface, press it flat, fold it over, and shape it to about 1/3 to 1/2 inch thick. Cut rounds with a biscuit cutter.
Baking
  1. Set the biscuits on the prepared cookie sheet and bake for about 10 minutes, checking before they turn golden.
  2. Serve warm with chili or honey butter.

Notes

For best results, cool the mashed sweet potatoes and melted butter before mixing. Avoid overmixing dough and check texture before baking.
