Preparation
- Preheat your oven to 375°F and set out a rimmed 18 x 13-inch baking sheet.
- Toss the torn bread with the olive oil on the baking sheet, spreading the pieces in a single layer.
- Bake for 15 to 20 minutes, tossing once halfway through, until the bread is golden and crisp.
- Let the croutons cool while you make the dressing.
Dressing
- In a large bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, mashed anchovies, garlic, and 1/4 cup grated Parmesan.
- Season with salt and pepper to taste, adjusting as needed.
Assembly
- Add the chopped romaine to the bowl with the dressing and toss well until each piece is lightly coated.
- Add croutons and shredded Parmesan cheese, tossing gently to combine.
- Serve immediately to keep the croutons crisp and the lettuce fresh.
Storage Instructions
- Store leftover dressing in a jar in the refrigerator for up to 5 days.
- Keep croutons in an airtight container at room temperature for up to 2 days.
Notes
For the best texture, wash romaine well and dry fully before chopping. Toss the salad right before serving and store ingredients separately if there are leftovers.
