Seasoning and Oil
  • 3 tbsp olive oil Can substitute with avocado oil or melted butter.
  • 1 tsp garlic powder Gives a lovely flavor.
  • 1 tsp Italian seasoning Alternative: herbes de Provence or a blend of thyme, rosemary, and oregano.
  • 1/2 tsp kosher salt Adjust to taste; avoid over seasoning.
Miscellaneous
  • 4 squares Heavy-duty aluminum foil Large enough to hold the chicken and vegetables.

Method
 

Preparation
  1. Preheat your grill or campfire to medium heat, approximately 400 degrees Fahrenheit.
  2. Cut four large squares of heavy-duty aluminum foil.
Assemble
  1. Divide the chicken breasts, baby potatoes, and green beans equally across the foil squares.
  2. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, and kosher salt.
Seal and Cook
  1. Fold the foil over the ingredients, sealing tightly but leaving space for steam.
  2. Place the foil packets on the grill or campfire coals and cook for 20 to 25 minutes, checking for doneness.
Serve
  1. Carefully open the foil packets and serve the meal directly from the foil, enjoying the rustic presentation.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, use an oven at 375 degrees Fahrenheit for about 10 minutes.
