Ingredients

Main Ingredients
  • 2 cups vanilla yogurt Use plain or vanilla yogurt with minimal added sugars.
  • 1 cup mandarin oranges (drained) Tangerines or clementines can be used as a substitute.
  • 1 cup pineapple chunks Fresh pineapple can be substituted for canned.
  • 1 cup whipped cream Coconut whipped cream is a good dairy-free alternative.
  • to taste granola Can be replaced with nuts or cereal for crunch.
  • to taste honey Maple syrup can be used as an alternative.

Method

Preparation
  1. Start by selecting clear glasses or jars to showcase the vibrant layers of your parfait. Make sure they are clean and dry before you begin layering the ingredients.
  2. Spoon ½ cup of vanilla yogurt into the bottom of each glass. Spread it evenly to create a solid white base, ensuring it's level and smooth.
  3. Next, take ¼ cup of mandarin oranges and gently place them on top of the yogurt layer. Ensure they are evenly distributed to create a beautiful orange section.
  4. Now, add ¼ cup of pineapple chunks on top of the mandarin oranges. Let them form a bright yellow tip that perfectly mirrors the iconic candy corn colors.
  5. Add a generous dollop of whipped cream on top of the pineapple layer to crown your parfait and add creaminess.
  6. For added crunch, sprinkle granola on top of the whipped cream.
  7. Finally, drizzle a bit of honey over the top for sweetness. Chill your parfaits for about 15 minutes before serving to allow everything to set nicely.

Notes

Store in airtight containers in the refrigerator for up to 3 days. Individual components can be frozen, with yogurt lasting about 3 months and fruit for 1-2 months.
