For the caramel
  • 11 oz soft caramels, unwrapped Use a smooth blend for easy melting.
  • 2 tbsp heavy cream Can substitute with coconut cream for dairy-free option.
For the toppings
  • 1/2 cup chopped peanuts Can substitute with almond or cashew butter for a nutty twist.
  • 1/2 cup mini chocolate chips Can be replaced with crushed pretzels or shredded coconut.

Method
 

Preparation
  1. Toss the cored and sliced apple wedges with fresh lemon juice to prevent browning.
  2. Lay them on a clean towel or paper towels and pat dry gently.
Melting Caramel
  1. Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the unwrapped soft caramels and heavy cream.
  3. Microwave in 30-second bursts, stirring well in between, until melted and smooth (approximately 1.5 to 2 minutes total).
Dipping Apples
  1. If using popsicle sticks, insert one into the thick end of each apple wedge.
  2. Dip each apple wedge into the caramel, coating about two-thirds of the slice.
  3. Allow any excess caramel to drip off.
Adding Toppings and Chilling
  1. Roll the caramel-coated part of each slice in chopped peanuts, mini chocolate chips, or both.
  2. Press gently to ensure toppings stick.
  3. Place dipped apple slices on the lined baking sheet and refrigerate for about 15 minutes to let set.
Serving and Storing
  1. Serve the caramel apple slice bites within a few hours for best texture and flavor.
  2. Store leftovers in an airtight container in the refrigerator for up to 2 days.

Notes

To keep apple slices crisp, toss immediately with lemon juice after slicing. If caramel feels too hard after refrigeration, let sit at room temperature for 5-10 minutes before serving.
