  • 1 lb sausage (such as kielbasa or smoked sausage) Choose high-quality sausage for better flavor.
  • 4 medium potatoes, diced
  • 2 cups green beans, trimmed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil Can substitute with avocado or canola oil.
  • Salt and pepper to taste

Method
 

Preparation
  1. Heat 2 tablespoons of olive oil in a large cast iron skillet over medium heat until shimmering.
  2. Add 1 chopped onion and 3 minced garlic cloves. Sauté for about 2-3 minutes until fragrant.
  3. Add 4 diced medium potatoes. Cook for about 10 minutes, stirring occasionally, until they start to soften.
Cooking
  1. Add 1 pound of sausage to the skillet. Cook until browned, about 5-7 minutes.
  2. Stir in 2 cups of green beans and season with salt, pepper, and any optional herbs. Mix well.
  3. Cover the skillet and cook for an additional 10-15 minutes until the green beans are tender.
Serving
  1. Remove from heat and serve hot.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Freeze for up to 2 months.
