Preparation
- Heat 2 tablespoons of olive oil in a large cast iron skillet over medium heat until shimmering.
- Add 1 chopped onion and 3 minced garlic cloves. Sauté for about 2-3 minutes until fragrant.
- Add 4 diced medium potatoes. Cook for about 10 minutes, stirring occasionally, until they start to soften.
Cooking
- Add 1 pound of sausage to the skillet. Cook until browned, about 5-7 minutes.
- Stir in 2 cups of green beans and season with salt, pepper, and any optional herbs. Mix well.
- Cover the skillet and cook for an additional 10-15 minutes until the green beans are tender.
Serving
- Remove from heat and serve hot.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. Freeze for up to 2 months.
