Preparation
- Preheat your oven to 425°F (220°C).
- Rinse the whole chicken under cold water and pat it dry with paper towels.
- Generously season the chicken inside and out with salt and pepper.
- Soften the butter and mix in freshly chopped tarragon and thyme, then rub this mixture all over the chicken.
Cooking
- Place the chicken breast-side up in a roasting pan and roast in the preheated oven for about 1 hour to 1 hour 15 minutes.
- Use a meat thermometer to check that the internal temperature reaches 165°F in the thickest part of the thigh.
Finishing Touches
- Remove the chicken from the oven and let it rest for about 15 minutes.
- Pour the Chardonnay into the roasting pan, scraping up any bits stuck to the bottom, and simmer over medium heat for about 3 minutes.
- Stir in the heavy cream and let the mixture simmer until it thickens slightly. Taste and adjust seasoning as needed.
- Carve the chicken into portions and drizzle the creamy sauce generously over the chicken before serving.
Notes
For added flavor, consider incorporating root vegetables in the roasting pan. Ensure to rest the chicken after roasting to keep the meat moist.
