  • 5 lb russet potatoes, peeled and cubed Look for firm, smooth potatoes without bruises.
  • 8 oz cream cheese, softened Ensure it's at room temperature for easy mixing.
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese 1.5 cups mixed in, 0.5 cups for topping.
  • 4 slices bacon, cooked and crumbled
  • 4 tbsp butter
  • 3 pieces green onions, sliced For garnish.
  • salt To taste.
  • pepper To taste.

Method
 

Preparation
  1. In a large pot of salted water, boil the cubed russet potatoes for about 15 minutes, or until they are fork-tender. Drain well.
  2. Preheat your oven to 350°F (175°C).
  3. In a mixing bowl, mash the drained potatoes together with the softened cream cheese, sour cream, butter, salt, and pepper until smooth.
  4. Gently fold in 1.5 cups of shredded cheddar cheese into the potato mixture.
  5. Pour the cheesy potato mixture into a greased baking dish, smoothing the top with a spatula. Layer the remaining cheddar cheese over the top.
  6. Bake in the preheated oven for 25-30 minutes until bubbly and golden brown on top.
  7. Once done, sprinkle crumbled bacon and sliced green onions on top before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
