  • 2 cups shredded cooked chicken Use leftover rotisserie chicken for convenience.
  • 1 cup BBQ sauce Use your favorite flavor of barbecue sauce.
  • 1 cup shredded cheese Cheddar or a blend works well.
  • 1 large onion, thinly sliced Adds sweetness that balances the smokiness.
  • 4 large flour tortillas Can substitute with whole wheat tortillas.
  • 1 tablespoon olive oil For sautéing the onions.
  • to taste salt and pepper Adjust to preference.

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Add the sliced onion and sauté until they become soft and translucent, about 5 minutes.
  3. In a separate bowl, mix shredded cooked chicken with BBQ sauce until well coated.
Cooking
  1. Place one tortilla in the heated skillet, and add a portion of the BBQ chicken mixture, sautéed onions, and shredded cheese.
  2. Carefully place another tortilla on top. Cook until the bottom tortilla is golden brown, about 3-4 minutes.
  3. Flip the quesadilla carefully and cook until the other side is also golden brown and the cheese has melted, about another 3-4 minutes.
  4. Remove from the skillet, let cool for a minute, then cut into wedges and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. For freezing, wrap tightly and store for up to 2 months. Reheat on stovetop for best results.
