Ingredients
  

For the Meatballs
  • 1 pound ground beef Choose an 80/20 fat ratio for juiciness.
  • 1 cup Italian bread crumbs
  • 1/2 cup grated Parmesan cheese Can substitute with Pecorino Romano.
  • 1/4 cup chopped parsley Fresh herbs can be substituted.
  • 1 large egg Acts as a binder for the meatballs.
  • Salt to taste salt and pepper
  • Pepper to taste salt and pepper
For the Sandwich Assembly
  • 1 jar marinara sauce Use good-quality sauce for the best flavor.
  • 4 pieces sub rolls Toasted for extra crunch.
  • 8 slices provolone cheese Can substitute with mozzarella.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients.
  2. In a large bowl, combine the ground beef, Italian bread crumbs, grated Parmesan cheese, chopped parsley, egg, salt, and pepper. Mix until combined.
  3. Form the mixture into meatballs approximately 1 inch in diameter.
Cooking
  1. Heat a skillet over medium heat with a little olive oil. Brown the meatballs on all sides for about 5-7 minutes.
  2. Spread a thin layer of marinara sauce in a baking dish, add the browned meatballs, and pour remaining sauce over them. Bake for about 25 minutes.
  3. While the meatballs bake, split and toast the sub rolls until golden brown.
  4. Once the meatballs are done, place them in the toasted sub rolls, top with provolone cheese, and return to the oven briefly until the cheese is melted.
Serving
  1. Serve warm and enjoy each cheesy bite.

Notes

This recipe is perfect for chilly nights and can also be customized with different toppings. Leftover meatball subs can be stored in the fridge for up to 3 days.
