Preparation
- Preheat your oven to 375°F (190°C) and prepare a baking dish by spreading a light layer of enchilada sauce on the bottom.
- In a mixing bowl, combine the shredded chicken with half of the red enchilada sauce, cumin, garlic powder, and season with salt and pepper.
- Fill each corn tortilla with a generous spoonful of the chicken mixture, rolling them tightly seam-side down in the prepared baking dish.
Cooking
- Pour the remaining enchilada sauce over the filled tortillas in the baking dish, and sprinkle shredded cheese evenly on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 to 25 minutes.
- After baking, remove the foil and let the enchiladas bake for an additional 10 minutes until the cheese is bubbly and lightly golden brown.
- Garnish with fresh cilantro if desired, then let them sit for a few minutes before serving.
Notes
