  • 1 lb breakfast sausage, casings removed Look for a flavorful sausage.
  • 1 32 oz bag frozen tater tots Spread in an even layer.
  • 2 cups shredded cheddar cheese, divided Reserve half for topping.
  • 8 large eggs
  • 1 cup whole milk Can be substituted with 2% milk.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 cup green onion, sliced, for garnish Can substitute with chives or parsley.

Method
 

Preparation
  1. Preheat the oven to 375°F and grease a 9x13-inch baking dish.
  2. In a skillet over medium-high heat, cook the breakfast sausage for 6 to 7 minutes until browned, breaking it up as it cooks.
  3. Drain any excess fat from the cooked sausage.
  4. Spread the frozen tater tots in an even layer across the bottom of the prepared baking dish.
  5. Layer the cooked sausage over the tater tots and sprinkle 1 cup of the cheddar cheese on top.
  6. In a large bowl, whisk the eggs, milk, salt, black pepper, and garlic powder until smooth.
  7. Pour the egg mixture evenly over the layers in the baking dish.
Baking
  1. Bake the casserole uncovered for 45 to 50 minutes until the eggs are set and the top is golden.
  2. Sprinkle the remaining 1 cup of cheddar cheese over the top and bake for an additional 5 minutes until melted.
Finishing Touches
  1. Let the casserole rest for 10 minutes before slicing.
  2. Garnish with sliced green onions and serve warm.

Notes

This casserole can be made ahead and reheats well. Store leftovers in an airtight container for up to 4 days.
