Preparation
- Preheat your oven to 350°F (175°C) and prepare ungreased cookie sheets.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon.
- Gradually mix the dry ingredients into the wet mixture, stirring gently until just combined.
- Fold in the rolled oats and raisins.
- Using a rounded tablespoon, drop the cookie dough onto prepared sheets, spacing them about two inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes or until the edges turn golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
To store, keep in an airtight container at room temperature for up to one week. For freezing, place cookies in a resealable freezer bag and separate to prevent sticking.
