For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure the butter is softened, not melted for best results.
  • 1 cup packed brown sugar Can substitute light brown sugar for a milder flavor.
  • 1/2 cup granulated sugar
  • 2 large eggs Add one at a time for better mixing.
  • 1 tsp pure vanilla extract
  • 1.5 cups all-purpose flour Can substitute part with whole wheat flour if desired.
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins Can be substituted with dried cranberries or chocolate chips.

Method
 

Preparation
  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar with an electric mixer for 2 to 3 minutes until light and fluffy.
  3. Add eggs one at a time, mixing in each before adding the next. Then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry mixture to the butter mixture, mixing on low speed until just combined.
  6. Stir in the rolled oats and raisins by hand until evenly distributed.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake for 10 to 12 minutes until edges are golden and centers look slightly soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 1 week. They can be frozen for up to 3 months and reheated for fresh flavor.
