  • 2 tablespoons honey or maple syrup Can be replaced with agave syrup or stevia.
  • 1/2 teaspoon vanilla extract Experiment with almond or coconut extract if desired.
  • 1 ripe mango diced Can substitute with other seasonal fruits.
  • to taste Mint leaves Optional for garnish.

Method
 

Preparation
  1. In a medium-sized bowl, add the chia seeds and coconut milk (or almond milk). Stir well with a spoon to ensure the chia seeds are evenly distributed throughout the liquid.
  2. Next, add honey or maple syrup, along with the vanilla extract. Mix everything thoroughly until combined.
  3. Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow the mixture to chill for at least four hours or overnight.
Serving
  1. When ready to serve, remove the bowl from the refrigerator and give the pudding a good stir.
  2. Spoon the chia seed pudding into serving bowls and top each portion generously with the diced mango. Add mint leaves if desired.
  3. Enjoy your delicious chia seed pudding with mango topping!

Notes

Store covered in the refrigerator for up to five days. Can freeze for up to three months. Stir before serving to redistribute ingredients.
