Method
Cooking the Pasta
- Begin by cooking the whole wheat penne according to the package directions. Add a bit of salt to the boiling water to enhance the flavor. Once al dente, drain the pasta and set aside.
Preparing the Chicken
- While the pasta is cooking, season the diced chicken breasts with black pepper. Heat the olive oil in a large skillet over medium heat.
- Once the oil is hot, add the seasoned chicken and cook for about 6-7 minutes, or until browned and cooked through.
Adding Garlic and Tomatoes
- Once the chicken is cooked, add the minced garlic to the skillet. Stir for about a minute until fragrant, then add the halved cherry tomatoes.
- Cook for an additional 3 minutes, allowing the tomatoes to soften and release their juices.
Incorporating Balsamic Vinegar
- Pour in the balsamic vinegar and allow the mixture to simmer for about 2 minutes to deepen the flavors.
Tossing with Pasta and Basil
- Add the cooked penne and fresh basil to the skillet, tossing everything until well combined. Adjust seasoning if necessary.
Serving
- Serve the Chicken Bruschetta Whole Wheat Penne Pasta warm and enjoy!
