Preparation
- Preheat your oven to 350°F (175°C) and prepare a baking dish.
- In a large mixing bowl, combine shredded chicken, half of the green enchilada sauce, and diced onions. Season with salt and pepper.
Assembly
- Spread a little sauce at the bottom of your baking dish.
- Fill each corn tortilla with the chicken mixture, roll them up tightly, and place them seam-side down in the baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
Baking
- Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before serving. Garnish with fresh cilantro if desired.
Notes
