Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts Choose plump and pink breasts without discoloration.
  • Salt and pepper, to taste Enhances overall flavor.
  • 1/2 cup all-purpose flour For dredging the chicken.
  • 4 tablespoons olive oil For cooking the chicken.
  • 2 tablespoons butter Can substitute with coconut oil for dairy-free.
For the Sauce
  • 1/2 cup chicken broth Vegetable broth or white wine can be used as substitutes.
  • 1/2 cup fresh lemon juice Fresh juiced is preferred over bottled.
  • 1/4 cup capers, drained Green olives can be used in place of capers.
  • Fresh parsley, chopped (for garnish) Can be replaced with other herbs like basil or thyme.

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper evenly on both sides.
  2. Dredge each seasoned chicken breast in flour, shaking off any excess.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the floured chicken breasts to the skillet and cook for 3-4 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the butter and let it melt.
  5. Pour in the chicken broth, fresh lemon juice, and capers; bring to a gentle simmer.
  6. Return the cooked chicken to the skillet and let it simmer for an additional 2-3 minutes to absorb flavor.
Serving
  1. Garnish your Chicken Piccata with fresh parsley before serving.

Notes

Store leftovers in an airtight container for up to 3 days. For freezing, allow to cool and store for 2-3 months. Reheat in a skillet with broth or in the microwave covered with a damp paper towel.
