Preparation
- Season the chicken breasts with salt and pepper evenly on both sides.
- Dredge each seasoned chicken breast in flour, shaking off any excess.
Cooking
- In a large skillet, heat the olive oil over medium-high heat.
- Add the floured chicken breasts to the skillet and cook for 3-4 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the butter and let it melt.
- Pour in the chicken broth, fresh lemon juice, and capers; bring to a gentle simmer.
- Return the cooked chicken to the skillet and let it simmer for an additional 2-3 minutes to absorb flavor.
Serving
- Garnish your Chicken Piccata with fresh parsley before serving.
Notes
Store leftovers in an airtight container for up to 3 days. For freezing, allow to cool and store for 2-3 months. Reheat in a skillet with broth or in the microwave covered with a damp paper towel.
