Ingredients

For the cake
  • 1 cup semi-sweet chocolate chips Opt for high-quality chocolate for best results.
  • 1/2 cup unsalted butter Can be substituted with coconut oil or vegan butter.
  • 1 cup powdered sugar
  • 2 large eggs Can be replaced with applesauce for a vegan option.
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour Can be substituted with gluten-free flour.
  • 1 pinch salt
For serving
  • 4 scoops vanilla ice cream Can be substituted with other flavors.

Method

Preparation
  1. Preheat your oven to 425°F (220°C) and prepare four ramekins by greasing them with unsalted butter and lightly dusting with flour.
  2. In a microwave-safe bowl, combine the chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring in between until fully melted and smooth.
  3. Stir in the powdered sugar until well combined, then add the eggs, egg yolks, and vanilla extract. Mix until smooth.
  4. Gently fold in the flour and a pinch of salt until just combined; be careful not to overmix.
  5. Distribute the batter evenly among the prepared ramekins.
Baking
  1. Place the ramekins in the preheated oven and bake for 12 to 14 minutes until the edges are firm but the center remains soft.
Serving
  1. Let the cakes cool for about a minute, then carefully invert the ramekins onto plates to reveal the molten center. Serve warm with vanilla ice cream.

Notes

Ensure proper greasing of ramekins to avoid sticking. Monitor baking closely to prevent overbaking, which can lead to a firmer center.
