Ingredients

Main Ingredients
  • 2 each egg yolks Use fresh eggs for best results.
  • 2.5 cups milk, any type Whole milk for a creamier texture, or 2% if preferred.
  • 1/3 cup sugar Can substitute with coconut sugar for a caramel-like taste.
  • 1/3 cup unsweetened cocoa powder Dutch-process cocoa can be used for a smoother flavor.
  • 1.5 tablespoons cornstarch Can be replaced with arrowroot powder.
  • 1 pinch kosher salt
  • 2 ounces dark chocolate or chocolate chips Optional for a deeper chocolate flavor.
Toppings (Optional)
  • 1 serving whipped cream For topping, optional.
  • 1 serving shaved chocolate For topping, optional.

Method

Preparation
  1. Start by whisking the 2 egg yolks in a bowl until smooth. Then whisk in the 2 1/2 cups milk and set the mixture aside.
  2. In a medium saucepan, combine the sugar, cocoa powder, cornstarch, and salt. Stir them together to prevent lumps.
  3. Pour the egg and milk mixture over the dry ingredients and whisk until smooth.
Cooking
  1. Set the pan over medium-high heat and whisk constantly. Once the mixture begins to simmer, add the dark chocolate or chocolate chips if using.
  2. Continue to stir for about 1 minute, or until the chocolate melts and the pudding thickens. Remove from heat immediately.
Chill and Serve
  1. Pour the pudding into dessert dishes and chill for at least 1 hour before serving. Cover with plastic wrap to avoid a skin forming.
  2. Top with whipped cream and shaved chocolate before serving. Enjoy chilled for the best texture and flavor.
