Ingredients

Dry Ingredients
  • 2 cups all-purpose flour, spooned and leveled
  • 1 tbsp baking powder
  • 1/4 cup granulated sugar
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1/4 tsp fine sea salt
Wet Ingredients
  • 2 large eggs, separated, room temperature
  • 1 3/4 cups store-bought or homemade eggnog
  • 1/3 cup unsalted butter, melted and cooled
  • 1 tsp pure vanilla extract
For Serving
  • Nonstick cooking spray, for the waffle iron
  • Whipped cream, for topping
  • Pure maple syrup, for serving
  • Ground nutmeg, for dusting
  • Fresh berries, for garnish (optional)

Method

Preparation
  1. Preheat a Belgian waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, baking powder, sugar, nutmeg, cinnamon, and salt.
  3. In a separate bowl, whisk the egg yolks, eggnog, melted butter, and vanilla extract until well combined.
  4. In a clean, dry bowl, beat the egg whites with a hand mixer on medium-high speed until soft, billowy peaks form.
  5. Pour the egg yolk mixture into the dry ingredients and whisk just until combined, then gently fold in the whipped egg whites.
Cooking
  1. Lightly coat the preheated waffle iron with nonstick cooking spray.
  2. Add the batter according to your waffle iron’s directions, usually about 1 to 1 1/4 cups.
  3. Close the lid and cook for 4 to 6 minutes, until the waffles are deeply golden and crisp.
Serving
  1. Top each waffle with whipped cream, maple syrup, and a light dusting of nutmeg.
  2. Add fresh berries for color and freshness, and serve right away.

Notes

Serve with crispy bacon, scrambled eggs, or a fruit salad to balance the rich eggnog flavor. Store leftover waffles in an airtight container for up to 3 days or freeze for up to 2 months.
