Ingredients
  

Dry Ingredients
  • 2 oz shredded beef suet Use fresh and well chilled for best results.
  • 4 oz dark brown sugar Can substitute with light brown sugar for milder sweetness.
  • 1 oz self-rising flour Sifted.
  • 2 oz fresh white breadcrumbs
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1/8 tsp freshly grated nutmeg
  • 1 pinch ground cinnamon
  • 5 oz currants
  • 2 oz sultanas (golden raisins)
  • 2 oz raisins
  • 1/2 oz mixed candied peel Can substitute with orange peel or dried cherries.
  • 1/2 oz blanched almonds Chopped.
  • 1/2 small apple Peeled, cored, and finely chopped.
  • 1/2 zest orange Zest only.
  • 1/2 zest lemon Zest only.
Wet Ingredients
  • 1 tbsp dark rum For added flavor.
  • 1 1/4 oz barley wine Can be adjusted.
  • 1 1/4 oz stout Add a splash more if batter seems stiff.
  • 2 large eggs
Others
  • Softened butter For greasing a 1-pint pudding basin.
  • Parchment paper, aluminum foil and kitchen string For wrapping the pudding basin.
  • 1/4 cup brandy To flame (optional).
  • Brandy butter, custard or rum sauce To serve with the pudding.

Method
 

Preparation
  1. In a large bowl, combine the suet, brown sugar, flour, breadcrumbs, allspice, cloves, nutmeg, and cinnamon. Stir in the currants, sultanas, raisins, candied peel, almonds, chopped apple, and both zests until everything is well mixed.
  2. In a separate bowl, whisk together the rum, barley wine, and stout. Beat in the eggs until smooth.
  3. Pour the wet mixture over the dry ingredients and mix until evenly combined. The batter should look loose and moist; add more stout if it seems stiff.
  4. Cover the bowl and refrigerate for about 12 hours.
Cooking
  1. Butter a 1-pint pudding basin and pack the batter in, leaving about 3/4 inch at the top for expansion. Cover with parchment and foil, making a pleat in the center.
  2. Steam over a gentle simmer for 8 hours. Ensure to top up the water as needed.
  3. Cool the pudding, re-wrap it, and store in a cool, dark place for up to a month.
  4. On serving day, steam it again for 2 1/4 hours until hot.
Serving
  1. Run a knife around the edge of the basin, turn out onto a warm serving plate, and optionally ignite the brandy to serve flambé style.
  2. Serve warm with brandy butter, custard, or rum sauce.

Notes

This pudding improves in flavor over time and can be made ahead of Christmas. Handle the alcohol with care.
