  • 2 cups basmati rice
  • 4 cups water
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

Method
 

Preparation
  1. Start by rinsing the basmati rice under cold water in a fine-mesh strainer until the water runs clear.
  2. In a medium-sized pot, bring water to a boil over high heat. Add a pinch of salt.
  3. Carefully add the rinsed rice to the pot and stir gently to ensure even distribution.
  4. Lower the heat to a simmer, cover the pot, and let the rice cook for 15-20 minutes.
  5. Once cooked, remove from heat and let sit for 5 minutes before fluffing the rice with a fork.
Mixing
  1. In a large bowl, stir the olive oil, lime juice, and chopped cilantro into the fluffed rice. Mix well and adjust salt to taste before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. This dish freezes well for 1-2 months. Reheat on the stovetop with a splash of water or in the microwave for 1-2 minutes.
