Cinnamon Apple Pie

Ingredients
  

For the crust
  • 2.5 cups 2 ½ cups all-purpose flour
  • 1 teaspoon 1 teaspoon salt
  • 1 tablespoon 1 tablespoon sugar
  • 1 cup 1 cup unsalted butter, cold and diced Vital for flaky texture
  • 6-8 tablespoons 6 to 8 tablespoons ice water Add gradually until dough forms
For the filling
  • 6-8 medium 6 to 8 medium apples, peeled, cored, and sliced Choose a mix of tart and sweet varieties
  • 0.75 cups ¾ cup sugar
  • 2 teaspoons 2 teaspoons ground cinnamon
  • 1 tablespoon 1 tablespoon lemon juice Brightens flavors
  • 2 tablespoons 2 tablespoons butter For dotting on top of the filling

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the flour, salt, and sugar.
  3. Cut in the cold, diced unsalted butter until the mixture resembles coarse crumbs.
  4. Gradually stir in the ice water until the mixture forms a ball.
  5. Wrap the dough in plastic wrap and refrigerate for at least 4 hours or overnight.
Rolling and Filling
  1. Once chilled, roll out half of the dough to fit your pie pan.
  2. In another bowl, mix the sliced apples with sugar, cinnamon, and lemon juice.
  3. Pour the apple mixture into the crust and dot with butter.
  4. Roll out the second half of dough and place over the filling, sealing the edges.
  5. Cut slits in the top crust for steam to escape.
Baking
  1. Bake in the preheated oven for 15 minutes.
  2. Reduce the temperature to 350°F (175°C) and continue baking for about 35 to 45 minutes or until apples are soft and crust is golden brown.

Notes

Serve warm with vanilla ice cream or whipped cream. Store in the refrigerator for 3-4 days or freeze for up to 3 months.
